Spiros Drossos is a culinary maestro with roots in Napa Valley, where his passion for food was ignited at his family’s iconic restaurant, The Penguins Seafood Grotto. Starting as a Maitre D’, he learned the art of hospitality and fine dining from the ground up. With an entrepreneurial spirit, Spiros went on to create some of the region’s most celebrated dining experiences, including Speero’s Restaurant and Tavern, Selini, and The Boathouse Restaurant and Grille at Sonoma County Airport. He also brought a slice of the Midwest to California with Chicago Pizza Kitchen, making his mark in the competitive SF Bay Area food scene.
After immigrating to Ontario, Canada, Spiros wasted no time in establishing a culinary footprint, opening two more Chicago Pizza Kitchen locations in Maple and Woodbridge within two years. But it was his innovative approach to catering that truly set him apart. Through his venture, Food Cabbie Bistro, Spiros brings live, on-site catering to life, offering dishes inspired by his travels across the United States. From intimate private events to grand corporate gatherings and unforgettable weddings, his cuisine always leaves a lasting impression.
Spiros’ culinary flair has even caught the attention of national television, earning him a spotlight on the popular show Four Weddings Canada, where his creative dishes wowed the judges and audiences alike. Whether crafting a gourmet pizza or curating a bespoke wedding menu, Spiros blends flavor, creativity, and experience to create truly memorable dining experiences.
